Here is the Veggie Farro Salad that I created this week. I am still working out some of the flavors, so I will have the updated recipe posted soon (I hope). I bought another pasta so am going to try a healthy penne pasta with roasted tomatoes (if I am able). Feedback is always welcome if anyone tries any of these recipes! Thanks!

ReplyDeleteWe have similar genius hour projects. I like that you are using Hello Fresh to help you find good recipes and then making substitutions to make it healthier. Your salad that you made looks really good. I actually started to make a lot of vegetarian recipes a few months ago because I was trying to get more plant protein. I found a lot of great recipes on Pinterest for this (it just takes some time to sift through them). I try to have at least two vegetarian dinners a week to cut down on meat consumption. Thanks for sharing your ideas and good luck with your taste combinations!
Thanks Erin! I wasn't a big vegetarian fan until my daughter started eating vegetarian and had to cook for her. I have tried vegetarian cookbooks and meals before and they either don't taste good or have weird vegetables or are alot of pasta recipes. Now that I have been eating it for awhile my taste for meat has pretty much diminished. I still eat chicken but really don't even have a taste for steak anymore. I hope your meals work out! I'm going to check out Hello Fresh deliveries, I haven't heard about them before but this is something that I would like to explore especially once we return to normal school schedules. Like you said, I want to cook healthier but it has to be easy to put together meals that you can do at the end of the day. While I like going grocery shopping or I used too sometimes I don't have enough time or it becomes a hassle. I'll check your blog for future recipes.

Hi Inma, I like most of the meals I have gotten from Hello Fresh. I tried them with a teacher discount originally, so make sure you do that (or something like that when they have free offers) because I was literally going crazy at home trying to plan stuff that my family would eat. So I tried it with two meals a week for 4 people and was able to feed my family of 5, with some leftovers some nights even. I really like the meals, but they usually include alot of cream cheese and sour cream, so I am trying to substitute just to eliminate that a bit. So far it seems to be working. I also like the fact that they give you step by step directions for making meals that I had not known before, so I have learned some new ways of cooking, which I have been able to transfer over to meals that weren't from Hello Fresh too. If you have come up with any meals that meet all or even some of the criteria you mentioned (healthy, taste good, little time, little prep and little clean-up) please share them!!

ReplyDeleteYour salad looks great and is so healthy. I tried a company similar to Hello Fresh but felt the same way you did with the meals not being as healthy or too many calories or carbs. It does help not having to plan and did teach me how to cook things I normally wouldn't have. Can't wait to see more of your recipes, love that they are low prep! What type of pasta did you use, I bought cauliflower pasta but haven't tried it yet?
Hi Dara, I used Barilla whole grain pasta and the red lentil pasta and they both were pretty good. It is only 1 ingredient in each. I have not tried cauliflower pasta but that is a good idea! Thanks!

My genius hour also involves cooking and healthy eating (well- eating less meat for environmental reasons, which also has health benefits!) It sounds like you are having some of the same difficulties as I am: our mind goes right to meat and sort of glosses over other protein sources for the "main star" of the dish. Have found myself going to some old favorites and subbing meat for chickpeas, eggplant, and zucchini. (i.e.- chickpea tacos, eggplant parm, cauliflower steaks). If you haven't, consider checking out "Pinch of Yum" (corny name, I know) on Pintrest; lots of good recipes that have "vegetarian suggestions" built right in!
Erin, thanks for the tip! I have made some recipes with roasted chickpeas and I have really enjoyed them! They are not one of my first ingredients to think of, so thanks for the idea!

Hi Maggie, thanks for your comments! Yes, my daughter DOES eat the meals. She basically will eat any of the veggie meals I cook. She DOES eat the farro too. I hope the recipe worked for you!
